Viva Vidalia

Hey Kids, how about some soup? ๐Ÿ™‚

“Oh c’mon, Crystal, Are you crazy?

With the summer we’ve been having, soup is the last thing we’re thinking about!”

I know. It’s certainly been a scorcher of a season so far,

and I haven’t lost all of my marbles . . . yet! ๐Ÿ˜‰

It’s just that Sir Beads and I have really been enjoying the bumper crop of Vidalia onions currently available at our local grocery store. They’re so deliciously sweet and having them in salads and omelets, lately, has reminded me of a good recipe – one I usually make during “soup weather”.

It’s soooo good that, heat or no heat, I’m going to grab a few more Vidalias and make it this week! ๐Ÿ˜€

  1. Vidalia Onions!! so wonderful. I love to saute them with zuccini and a little butter. When done, sprinkle with parmasean cheese. Magnifico!!
I am enjoying it pretty often right now.

  2. Our family just doesn’t like onions. I hope you enjoy your soup. We are sweltering here and I don’t feel like eating anything but salad or popsicles.

  3. I have been having various soups to eat in our home and
when I have been going out for dinner.
    Enjoy yours!

  4. I love those onions, and I eat soup all year round…even when it’s really hot outside! Thanks for the recipe Sweetie! xoxo Paulette

  5. Oh that sounds GOOD! My husband came across some vidalias at the store last month and I couldn’t understand why he was so excited about buying onions… Of course I’m not the chef in the family ๐Ÿ˜‰
