It’s Not Too Hot for Dessert!

I’ve told my oven: “See you in September.” 😉

Seriously Kids, who wants to swelter beside temperatures of 350 degrees and more during a summer heat wave?

Luckily, I’ve found a dessert recipe that requires no cooking at all! In fact, instead of cooking it, you freeze it. 😀

I’ve mentioned that I have a little collection of vintage cookbooks that were printed as fundraisers for various women’s groups. I found the following recipe in one of them. Don’t you just love the name of it? 😉

Thelma’s “Get Your Guy” Pie

Mix:
½ cup butter, melted
1 cup brown sugar
3 cups of crushed corn flakes
1 cup chopped nuts
½ cup shredded coconut.

Line a 9” pan with 2/3 of the above mixture.

Fill the shell with 1 quart of vanilla ice cream.

Top the ice cream with the remaining mixture.

FREEZE for several hours.

Serve with hot fudge sauce.

  1. Thank goodness for things like crock pot lasagna. I don’t turn on the oven either.
    I included the recipe in case anyone wants it.
    Ingredients:

    1 lb. ground beef
    1 large onion, finely chopped (I leave this out because my famiy hates onions)
    2 garlic cloves, crushed and minced
    1 large jar spaghetti sauce (such as Ragu in the 1 lb. 10 ounce jar)
    1 package (8 ounces) no-boil lasagna noodles
    16 ounces shredded mozzarella cheese
    1 lb. ricotta cheese (I have used cottage cheese too)
    1/4 cup milk
    1 egg
    1/2 cup shredded Parmesan/Romano cheese
    Salt and pepper to taste

    Preparation:
    Brown the beef, onion, and garlic in a little oil in a frying pan. Drain off any grease.
    Add the spaghetti sauce into the browned meat mixture. Mix well.
    In a separate bowl, mix the ricotta cheese, milk, and egg. Beat until thoroughly mixed and smooth. Then mix in the mozzarella cheese and the grated cheese, so that all the cheeses are combined.
    Grease the slow cooker/Crock Pot with some vegetable shortening on the bottom and sides.
    Put about 1/4 of the meat and sauce mixture in the bottom of the slow cooker/Crock Pot. Put a layer of noodles on top of that (break or cut them if needed). Put about 1/3 of the cheese mixture on top of that. Then repeat with sauce, noodles, cheese for another 2 layers. Top with meat sauce. Cook on low for 4-6 hours or until noodles are tender.

  2. Me, I like millionaire pie- whipped cream (homemade of course, darlings!) cream cheese, and a bit of sour cream, with shredded coconut and pineapple mixed in and pecans on top. Cool and scrumptious!

    I am crazy about lasagna, but have never tried it in the crockpot! The ingredients will be on my grocery list this week!

  4. Fun and easy, thats the ticket. Its not that I don’t like a hot oven. I have air for that, you know? I just don’t like to waste time cooking in the summer. Can’t think of a recipe to share at the moment. We are throwing together salads of all kinds. The boys are fending for themselves. I’m on summer vacation!! 3 months long.

  5. I’m on the road, traveling so can’t get to my recipes. But I have tried the lasagna – very yummy.
    The ice cream pie sounds awesome! Will have to try that next.
