On a sizzling summer evening, it’s no fun standing over a hot stove, so here’s a recipe to rely on when the temperatures soar! It’s quick, tasty, and nutritious!
But the best part . . . no cooking!
Speedy Summer Supper Salad
Pick up a cooked rotisserie chicken in the deli section of your grocery store.
Slice all of the meat into bite size chunks.
Add some mayo thinned with orange juice or pineapple juice.
Add some or all of the following ingredients:
1 lg. can pineapple bits – drained
Diced celery
Chopped walnuts, pecans, almonds
Delicious apples – cut into chunks
Raisins
Dried cranberries
Toss all to mix. Done!
Ice cream cones for dessert! 🙂
This is my kind of summer evening meal! It would be an appetizer for the boys who would be looking for the “real” supper. That’s when I would remind them that Chef Boyardee is in the pantry. I just ate a bagel, but this post makes my mouth water.
I love those cooked rotisserie chickens and try to have one either in my fridge or freezer at all times. I cut it up for sandwiches, salads, use it to stuff enchiladas or in stir fry!
We’re having chicken enchiladas tonight…using one that I halved and put in my freezer this month!
