Some of my favorite recipes are the ones that are easy to make… and call for ingredients that I already have on hand.
For many years, hubby’s family lived in the midwest, and every summer we would drive 800 miles (from the east coast) to spend a couple of weeks with them.
My mother-in-law was a wonderful cook. She truly made every meal special during our visits. Here’s her recipe for coffee cake, which she loved to serve as a special addition to breakfast.
Maybe you’ll surprise your family or friends by making it before the summer heat sets in!
As soon as it cools, slice it into small pieces, and put it on your prettiest serving dish. They’ll think they’re at a fancy bed and breakfast! 😉
2-1/3 c. flour
3-1/2 tsp. baking powder
1 c. sugar
½ tsp. salt
1 tsp. cinnamon
3/8 c. butter, melted
1 c. milk
2 eggs, beaten slightlyMix all dry ingredients together.
Mix all wet ingredients and add to the dry ingredients.
Pour mixture into a greased 10” by 6” baking pan or a 10” pie pan.Sprinkle over the top:
¼ c. sugar
¾ tsp. cinnamonBake @375 degrees for 30 to 35 minutes.
Well, Kids, this has been a great week! Thank you for your terrific comments – I enjoyed them so much!!!
Please be careful this holiday weekend. I hope you’re planning a little bit of fun and lots of relaxation.
Since Monday’s a holiday, let’s all meet back here on Tuesday, ok? 😉
Yep, I’ll be here on Tuesday.
Funny, I used to make coffee cake all the time. Since I am going to be home next week on gardencation, I think I’ll try your MIL’s recipe and maybe a few I had forgotten about. This is going to be difficult because I am determined to lose 5 pounds next week. But I haven’t been on the scale to check out where I am or where I am going so I will let my own judgement be the judge of it I did. How’s that sound? ~lol~
Have a super terrific weekend.
xx, Carol
You have a great week end – it sounds like it will be a beautiful week end.
Have a great weekend everyone, I will check back on Tuesday. We are going to our friend’s lake house. I’m going to play in/on the water and relax. Take care,
Kelly
Hi Carol,
“gardencation”?
I LOVE it!!! 😀
Sounds delish! ^^ I’ll be sure to share this recipe with my mom so the whole family can try it. c:
I love recipes that are with simple ingredients (and not stuff you have to search the stores for since you’ve never heard of the item before!) This sounds like a great recipe I’m definatly gonna try it thanks!
i love coffee cake!! and this recipe sounds great…..although i’m wondering if i can change the part about “slicing it in small pieces” to “no fork required….just go for it”…..hee hee
have a fun, safe weekend, sweet crystal!! xox, :))
Ooo…thanks for the recipe! I love coffee and cake! But have not tried actual coffee cake before. Unless tiramisu is considered as that?
Yum! It was good. (It’s all gone now.)
I made Sir Beads’ Mom’s Coffee Cake
on Saturday.
I enjoyed making it as well as eating it.
I guess my son liked it too.
When I got up the next morning half of the
cake was gone!
Thanks for the recipe.
I love all your recipes Crystal, and this looks like another yummy one! I’m grabbing it right now! Thank you! xoxo
